What Makes an Energy Ball Grain-Free (and Paleo)?
- No oats or grains — almond flour and coconut do the work instead.
- Real-food binders — nut butter, ground flax, a little honey or maple.
- No refined sugar or dairy — sweeten with honey/maple, use cacao nibs or clean dark chocolate.
- Nothing artificial — if you can’t pronounce it, it doesn’t go in.
Ingredients
- 1 cup almond flour
- ½ cup natural almond or peanut butter
- ¼ cup ground flaxseed
- ½ cup unsweetened shredded coconut
- 3 tbsp honey or pure maple syrup
- ⅓ cup dark chocolate chips (or cacao nibs for stricter paleo)
- 1 tsp vanilla extract
- Pinch of sea salt
- A splash of warm water, only if the mix feels dry
How to Make Grain-Free Energy Balls
- Mix the base. Stir the nut butter, honey, and vanilla until smooth.
- Add the dry stuff. Almond flour, flax, coconut, and salt — stir into a thick dough.
- Fold in the chocolate or cacao nibs.
- Adjust & chill. Too dry? A splash of warm water. Chill 20–30 minutes so they roll clean.
- Roll into ~15 balls. About a tablespoon each.
Easy Variations
- Cinnamon almond: add 1 tsp cinnamon (tastes like our El Churrito).
- Double chocolate: add 1 tbsp cacao powder to the dough.
- Lemon coconut: add lemon zest + extra shredded coconut.
Storage
- Fridge: airtight, up to 1 week.
- Freezer: up to 3 months — freeze on a tray, then bag.
